Make delicious noodles at home with this easy recipe!

 



Noodles are an incredibly versatile food, and can be used in both sweet and savory dishes alike. With that in mind, here’s an easy noodle recipe that will allow you to enjoy the comfort of homemade noodles without breaking the bank! This recipe makes enough noodles to feed 4 people.


Ingredients

7 cups all-purpose flour, plus more for dusting; 3 eggs; 1 cup warm water; 2 teaspoons salt. The first step is to make a well in your flour and add three eggs. Mix it together and then slowly add your water while you mix it into a dough. Knead it until you have a smooth dough ball and let it rest under a clean towel for an hour or so. After that, get out some of your dough and roll it flat with a rolling pin. Then cut strips of pasta dough about 1⁄4 inch wide. If you want fettuccine noodles, cut them 1⁄4 inch wide by 6 inches long. If you want spaghetti, cut them 1⁄2 inch wide by 4 inches long. Once they’re cut, lay them on a floured surface and cover them with another towel to keep them from drying out while you work on other pieces of pasta dough. Dust each piece lightly with flour before you cut it to prevent sticking. Repeat until you run out of dough. Cook your noodles in boiling salted water for two minutes if they are thick like spaghetti or longer if they are thin like fettuccine. Drain them and serve immediately tossed with butter, olive oil, lemon juice and Parmesan cheese or whatever else you prefer! You can also freeze your leftover pasta for later use. Simply separate each noodle with a fork before placing them in plastic bags or containers. Label and date these containers, as freezer burn can affect how long they last. To cook frozen noodles, simply thaw them overnight in your refrigerator and boil as directed above. They will take slightly longer to cook than fresh noodles because they were previously frozen. Noodles may be cooked without freezing by cooking them straight from freshly made dough (about 10 minutes). This will give you a chewier texture. Freshly made noodles are good served with meat sauce, but older ones go better with tomato sauce or pesto sauce. Preparation

Soak rice noodles in hot water until they become pliable, drain, and set aside. Boil a pot of water and cook carrots for 8 minutes until tender. While carrots are cooking, heat up 3 tablespoons of peanut oil in a pan or wok. Once heated, add two cloves of minced garlic and cook for about 30 seconds (just to lightly cook them). Stir often so garlic doesn't burn. Add salt and pepper to taste. After 1 minute of cooking add carrots (and peas if using) to garlic and stir fry them together for 2-3 minutes or until desired consistency is reached. Remove from heat and mix in chopped cilantro. Set aside while you prepare your sauce. In a separate bowl mix together soy sauce, vinegar, sugar, and red chili flakes. Heat your pan or wok on medium high heat and add another tablespoon of peanut oil to it once it's hot enough (you should be able to see small bubbles forming around your wooden spoon when you drag it across the bottom of your pan). Remove drained noodles from water and place them into your pan/wok with one hand while pouring half of your sauce mixture over top with another hand. Use chopsticks or tongs to toss noodles around while they're frying so that all sides get coated evenly by the sauce. Cook for about 5 minutes stirring frequently. Repeat steps 7-9 adding more sauce as needed until desired consistency is reached. Serve immediately topped with peanuts, fresh cilantro, and green onions! Enjoy :) 

Ok, so now that you know how to make noddles at home let’s talk about why making pasta at home is actually better than going out and buying some ;) When you buy pre-made pasta at stores there are always preservatives used to keep shelf life long and protect against bacteria growth. Although these may not cause immediate harm – little things like extra calories from preservatives can add up eventually. Making your own spaghetti also has health benefits because then you have control over what ingredients go into it such as choosing whole wheat or brown rice noodles instead of regular white ones which tend to be made with refined flour.


Serving

2-4 people, depending on portion size and appetite.Be sure not to rinse or soak your noodles if you want them to retain their firmness. If you’re looking for something more authentic than American-style spaghetti, try putting your noodles into some boiling water and then lowering it by one level after boiling (to decrease pressure). Then cover with a lid and cook over low heat for 10 minutes. A few notes: Different kinds of noodles take different amounts of time—fresh egg noodles may only need 3–4 minutes, while dried egg noodles can take 20–30 minutes. Also, if you’re using fresh pasta that doesn’t call for precooking, be careful not to overcook it—it can become mushy and break apart easily when overdone.
