Pancakes are awesome, but going out to get them isn't always practical. With this easy recipe, you can enjoy fluffy pancakes any time of the day, from the comfort of your own home. Follow these directions, and you'll be enjoying your own delicious breakfast in no time at all! Your friends and family will be begging you to make pancakes at home more often once they see how delicious they are!
Ingredients
1 cup all-purpose flour 1/2 tsp. baking powder 1/4 tsp. baking soda 2 tbsp. sugar 2 large eggs 3 tbsp. unsalted butter, melted and cooled slightly 2 cups buttermilk 1 tsp. vanilla extract 2 tbsp. vegetable oil or melted butter Maple syrup (optional) Powdered sugar (optional) Pecans, chopped (optional) Toppings such as fresh fruit or berries (optional) Directions: In a medium bowl, whisk together flour, baking powder and baking soda; set aside. In a separate bowl, whisk together sugar and eggs until light yellow in color; add butter to mixture and stir until smooth. Add buttermilk to egg mixture along with vanilla extract; stir until combined. Add wet ingredients to dry ingredients in three batches until just combined; let batter rest for 5 minutes before cooking pancakes. Heat griddle over medium heat for 5 minutes; brush with oil if necessary so pancakes don't stick while cooking. Ladle about 1/3 cup of batter onto hot griddle; cook until bubbles appear on top of pancake and edges are lightly browned, about 4 minutes. Flip pancake and cook for an additional minute or two. Repeat process with remaining batter, adding more oil to pan if needed. Serve pancakes warm with maple syrup, powdered sugar and any other toppings you like! Yields 12 small pancakes.

Eggs
For some people, eggs are a staple ingredient in pancakes. They help bind together ingredients and produce a fluffy texture once cooked. There are countless ways to prepare eggs that can be used as an alternative to butter or oil in your pancakes—we recommend you experiment with your favorites and find what works best for you. If you’re struggling to make luscious pancakes with eggs on their own, add them after removing from heat rather than before. This will give them time to cook through without over-mixing and producing tough pancakes. To create fluffier, lighter pancakes, try adding more egg whites than yolks! Also, beat your eggs vigorously by hand before adding them to your batter. That way, they’ll incorporate more air and make those all-important bubbles. Remember: Egg white is best for pancakes; use yolk if you want a rich taste and color but it's not necessary for good pancake making. Eggs are one of our favorite pancake toppings because they're delicious when fried into a crispy brown shell! Just crack open an egg onto your griddle then flip it when ready (you can use bacon grease instead of butter). It's so simple! The result is perfectly scrambled eggs wrapped around a pancake - simply divine. Be sure to season your eggs while cooking with salt and pepper. A bit of paprika is also tasty! And lastly, if you're frying up several servings worth of eggs, keep them warm in a small pan filled with about 1/4 water until serving time. We love doing things ahead of time which makes brunch prep quick and easy! And remember: always remove fried eggs carefully from hot surfaces using tongs or a spatula to avoid burning yourself. If you've made too many batches of pancakes during your first round, feel free to store any leftovers in an airtight container in your refrigerator overnight - they reheat wonderfully when popped into a hot skillet just before serving.
Milk
Always start with whole milk; it’s creamier and richer than any other kind. But feel free to use 2% or skim if you prefer a lighter consistency. Don’t even think about using fat-free—it just doesn’t work for pancakes. (But honestly, that really depends on your personal preferences.) If you opt for buttermilk instead of regular milk, reduce the amount of liquid in your recipe by 1/4 cup and add 2 teaspoons of lemon juice or white vinegar. Let sit for 5 minutes before proceeding with your recipe. It may seem like an extra step, but it will result in fluffier pancakes. If you don’t have buttermilk on hand, make some! Add 1 tablespoon of lemon juice or white vinegar to a measuring cup and fill with regular milk until reaching 1/2 cup total. Let sit for 5 minutes before proceeding with your recipe. This substitution works equally well in waffles and cakes. Try making your own pancake mix. Once you find a mix that suits your tastes, try replacing half of the required flour with whole wheat flour and then add oats, nuts, dried fruit or chocolate chips to kick things up a notch. Your pancake creations will be denser but they’ll also be healthier—and possibly tastier too! Be creative! Try adding sweet ingredients like chocolate chips, peanut butter or bananas right into your batter when mixing everything together. A substitute for eggs in baking. Substituting a half cup of applesauce for an egg adds sweetness and moisture to most baked goods. One cup of applesauce replaces two eggs and can be used in pancake recipes or when baking muffins, cakes or brownies. If you’re planning on substituting applesauce into your diet it’s important to remember that a single serving is equivalent to about one-fourth of a cup. Be sure not to use extra large portions; that might throw off your recipe by adding too much moisture. Applesauce can also be substituted as a fat replacement in baking. Replace up to three tablespoons of butter with one tablespoon of applesauce per stick of butter called for in your recipe. This substitution will add less than 10 calories per serving and cuts down on saturated fats, which are linked to heart disease. In addition, applesauce is low in sodium so it won’t cause high blood pressure like salt does. However, if you have health concerns such as hypertension or diabetes consult your doctor before making any changes to your diet.
