Channa chat may look intimidating to make, but it’s actually quite simple, as long as you know what you’re doing. It all starts with making the channa chat patties, which are essentially chickpea flour seasoned and deep-fried, before being served on top of fresh cilantro and onions, with sweet and tangy tamarind chutney in the center of it all. Here’s the best way to make channa chat at home!
What is Channa Chat?
Channa is a chickpeas based dish, made with onion, green chillies and tomatoes. Channa chat is just like Aloo Tiki with Channa but it has a different taste. It is very spicy and can be made easily with stuff lying in your kitchen. The spices used in Chat are Kali Mirch, Hari Mirch and Red chilli powder. It also contains jeera, ginger, garlic paste and garam masala so that it has a delicious taste. If you want to know how to prepare tasty chats then follow these steps 1) Soak 1 cup of Chickpeas overnight or for 8 hours. After soaking wash them thoroughly and keep aside.
2) Now heat 2 tbsp of oil in a pan, add 1⁄2 tsp cumin seeds to it, when they start crackling add 2 tsp ginger-garlic paste and fry till raw smell goes off. Add 4 chopped onions (medium sized), 1 tomato (chopped), 1⁄4 cup chopped coriander leaves and sauté till onions turn pinkish brown colour on medium flame. 3) Now add 1 tsp red chilli powder, 1 tsp garam masala powder, salt as per taste and mix well. Then add soaked chickpeas along with water in which they were soaked for 5 minutes and cook them for 10 minutes on low flame. After 10 minutes mash some chickpeas with hand so that gravy becomes thick.
4) When done garnish with fresh coriander leaves and serve hot with chapatti or pooris or naan.
Ingredients (5 ingredients)
1 tbsp. each of red chili powder, chopped ginger, chopped garlic and curry leaves, 2 tbsp. yogurt or fresh cream (optional), Salt according to taste. 4 tsp oil. 2 medium-sized onions, 1 small tomato (or tinned tomato), 300 gm chickpeas or garbanzo beans, 1 small onion cut into thin slivers and fried until golden brown in oil (for garnish). Serves 3-4 people
For making channa chat we will first prepare everything that is required for it. Take a large mixing bowl and add all ingredients mentioned under ingredients part except salt & fried onion(s) (this will be added later on when serving is ready). Once you mix everything well add salt as per your taste & mix once again properly making sure every ingredient has been mixed properly together. Heat a pan on high flame after washing it with water & then pour prepared mixture from above inside hot pan making sure mixture is evenly spread across inside pan which should take less than two minutes after applying heat because mix tends to stick when cooked for longer periods which would ruin its texture so be quick when pouring mix into pan by using spoon otherwise use hand instead of spoon because it's more convenient than spoon.
Procedure (10 steps)
Soak chickpeas in cold water overnight and boil them in water with a handful of salt. Grind cilantro, green chillies, ginger and garlic paste. Mix masala with boiled chickpeas. Garnish with sev, chat masala and lemon juice. Serve hot as snack or side dish for lunch or dinner along with rice or roti. As simple as that! Over-stirring will cause them to become dense and tough. Instead, stir gently in small circles until they are completely cooked through before flipping them over and cooking the other side.
Storing & Reheating Tips
Chole baturas are meant to be eaten right away, or within 1-2 days. Chole (chickpeas) and tandoori masala mayonnaise tend to stay fresh in your refrigerator for 1-2 weeks after they’ve been opened. When you first open a jar of either ingredient, transfer only what you will use into smaller containers and keep them in your refrigerator—when possible, try not to store leftovers for more than 2 days. Once you have used them all up (or know that there is not enough left for immediate consumption), transfer any leftover chickpeas or mayonnaise into an airtight container and freeze them until you’re ready to use them again. Frozen chickpeas can last anywhere from 3 months to a year, while frozen mayo lasts 6 months to 9 months. If you don’t plan on using them before their expiration date, it's best to buy small quantities as needed instead of stocking up on large amounts at once. You can reheat these items by placing them in an oven or microwave; just make sure to check their temperature before serving! You can also reheat these items on top of your stovetop burner: heat over medium heat until warm and serve immediately with rotis or naan breads.
